Spanish   -   Ilareak Baionakeo Urdai Azpikoarekin (Peas With Ham)   adapted from The Basque Kitchen by Gerald Hirigoyen

  • 3 Tablespoons Olive Oil
  • 1 Small Onion -- Chopped
  • 1 Ounce Ham -- Sliced
  • 4 Cups Green Peas
  • 1 Teaspoon Sugar
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 2 Tablespoons Butter
  • 2 Tablespoons Parsley -- Chopped
Directions Saute onion and ham in oil for 3 minutes. Add peas, sugar, salt, pepper and butter. Saute for 5 minutes. Sprinkle with parsley and serve.
Serves 4
