Spanish - Lentejas Con Chorizo En Cazuela

Ingredients
|
- 2 Cups Red Lentils
- 3 Ounces Bacon -- diced
- 1 Medium Onion -- chopped
- 3 Cloves Garlic -- finely chopped
- 2 Tablespoons Olive Oil
- 3 Large Tomatoes -- chopped
- 8 Ounces Chorizo -- sliced
- 1 Tablespoon Fresh Oregano -- chopped
- Salt And Pepper -- to taste
- 1 Teaspoon Paprika
- 1/4 Teaspoon Saffron

Directions
|
Saute bacon onion, garlic in oil 5 minutes. Add tomatoes, simmer 5 mintues. Add lentils, chorizo, herbs & seasonings, and enough water to cover. bring to boil, cover, cook gently 30 mintues. Add more water as necessary. Just before serving, stir in saffron. Serve.
