Ingredients
  • 2 Cups Red Lentils
  • 3 Ounces Bacon -- diced
  • 1 Medium Onion -- chopped
  • 3 Cloves Garlic -- finely chopped
  • 2 Tablespoons Olive Oil
  • 3 Large Tomatoes -- chopped
  • 8 Ounces Chorizo -- sliced
  • 1 Tablespoon Fresh Oregano -- chopped
  • Salt And Pepper -- to taste
  • 1 Teaspoon Paprika
  • 1/4 Teaspoon Saffron
Directions Saute bacon onion, garlic in oil 5 minutes. Add tomatoes, simmer 5 mintues. Add lentils, chorizo, herbs & seasonings, and enough water to cover. bring to boil, cover, cook gently 30 mintues. Add more water as necessary. Just before serving, stir in saffron. Serve.
