Spanish   -   Lursagar Berri Eta Babarrun Saltsa (Potato-Bean Ragout)   adapted from The Basque Kitchen by Gerald Hirigoyen

  • 2 Pounds French-Style Green Beans
  • 1 Pound New Yukon Gold Potatoes -- Halved
  • 3 Tablespoons Olive Oil
  • 1 Small Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • Salt And Pepper -- To Taste
  • 2 Tablespoons Butter
  • 3 Tablespoons Chives -- Chopped
Directions Bring potatoes to a boil in enough water to cover for 10 minutes. Add beans for the last 2 minutes. Drain. Saute onion and garlic in oil for 5 minutes. Add beans and potatoes, season with salt and pepper. Add butter, and chives. Saute for 5 minutes and serve.
