Spanish   -   Mar Y Montana   adapted from The Complete Spanish Cookbook

  • 4 Large Chicken Breasts
  • Salt And Pepper -- to taste
  • 3 Tablespoons Flour
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Buter
  • 8 Medium Shrimp -- peeled
  • 3 Medium Scallions -- chopped
  • 1 Cup Dry White Wine
  • 1/2 Cup Chicken Stock
  • 1/4 Cup Half And Half
  • 1 Tablespoon Fresh Tarragon -- chopped
Directions Coat chicken with salt pepper an dflour. Fry chicken in oil and butter until godlen, about 3 mins per side. Remove to baking dish, cover with foil. Boil shirmp until done. Brown onions in leftover oil. Add wine, boil until reduced by half. Add stock and cream, bring to simmer. Add tarragon, simmer 2 minutes. THen pour over chicken. Bake at 350* 10 minutes. Remove, place 2 shrimp on each chicken breast, return to oven for 2 minutes.
