Spanish   -   Merluza A La Gallega (Galician Fish Steaks)   adapted from Tapas by Penelope Casas

  • 1 Pound New Potatoes -- Sliced
  • 1 Small Onion -- Sliced
  • 6 Cloves Garlic -- Chopped
  • 1 Teaspoon Parsley -- Chopped
  • Salt And Pepper -- To Taste
  • 1/2 Teaspoon Thyme
  • 1 Medium Bay Leaf
  • 7 Tablespoons Olive Oil
  • 1 Teaspoon Red Wine Vinegar
  • 2 Medium Cod Steaks
  • 1/2 Teaspoon Paprika
Directions Place a layer of potatoes in a large frying pan, top with a layer of onions then garlic. Sprinkle with salt, pepper, thyme, bay leaves, oil and vinegar. Add enough water to cover. Bring to a boil and simmer for 10 minutes. Add fish and enough water to cover. Sprinkle fish with salt. Cover and simmer for 10 minutes. Pour off any remaining liquid. Sprinkle with paprika and serve.
