Spanish - Paella Barclelona

Ingredients
|
- 1 Cup Uncooked Rice
- 2 Medium Chicken Breasts -- cooked & diced
- 1 Can Artichoke Hearts -- small can
- 1 Cup Peas
- 1 Large Onion -- chopped
- 2 Medium Red Bell Pepper -- chopped
- 3 Cloves Garlic
- 1/2 Cup Tomato Puree
- 3 Cups Chicken Stock
- 3 Tablespoons Olive Oil
- 1 Pinch Saffron
- 1 Teaspoon Paprika
- Salt And Pepper -- to taste
- Parsley -- for garnish

Directions
|
Saute onion & garlic in olive oil unti transparent. Add all but parsley & artichokes. Simmer gently 25 minutes until rice is done. Arrange artichokes & parsley on top. Serve.
