Spanish - Papas Canary Islands Style

Ingredients

- 2 Medium Potatoes
- Salted Water -- for boiling
- 4 Dried Piquin Chiles -- seeded
- 4 Cloves Garlic -- finely chopped
- 2 Tablespoons Red Wine Vinegar
- 1 Tablespoon Olive Oil
- 1/2 Teaspoon Ground Cumin
- Parmesan Cheese -- to taste

Directions
|
boil potatoes with skins in heavily salted water for 15-20 minutes. cut potatoes in half lengthwise. scoop out potato. save skins. rehydrate chiles. place chiles, garlic, vinegar, cumin and oil in food processor and puree until smooth. mash sauce with potatoes and return to skins. top with cheese and bake 5 minutes at 400 degrees.
