Spanish   -   Patatas Al Caldero   adapted from Mediterranean Cooking

  • 1 Tablespoon Olive Oil
  • 2 Pounds Yellow Potatoes -- peeled
  • 1 Large Stale Dinner Roll
  • 2 Cloves Garlic -- finely chopped
  • 1 Medium Red Bell Pepper -- chopped
  • 1 Small Onion -- chopped
  • 1 Large Tomato -- chopped
  • 1 Medium Bay Leaf
  • 1/4 Teaspoon Ground Cloves
  • 1/2 Teaspoon Ground Cumin
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Paprika
  • Cayenne -- to taste
  • Salt -- to taste
  • Parsley -- garnish
Directions Brush baking sheet with oliv eoil. Preheat oven to 425* degrees. SLice potatoes thinly. Cover baking sheet with layer fo overlapping potatoes. Bake 20 mintues. Turnover, bake another 25. Remove from oven. Slice dinner roll into 4 pieces. Lightly brusn with garlic and olive oil. Plce them on baking sheet, brown 15 minutes in oven.Saute onions and peppers il oil until lightly brown, 5 minutes. Add tomato, bay leaf, cloves, cumin pepper, salt, paprika, cayenne. Cook 7 minutes. Rmove from heat, discare d bay leaf. Soak bread in water 5 mintues to soften. In food processor, puree bread along with 1 cup water and the tomato pepper mixture. Correct seasoning with salt and pepper. Bring to boil on stove, reduce heat, simmer, place potaotes in dauxce heat until heated through. Serve sprinkled with parsley.
