Spanish   -   Pescado En Amarillo (Swordfish In Saffron Sauce)   adapted from Tapas by Penelope Casas

Ingredients
  • 1 Tablespoon Olive Oil
  • 1 Small Onion -- Chopped
  • 1 Clove Garlic -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Medium Bay Leaf
  • 1 Can Tomatoes -- Chopped
  • 2 Tablespoons Brandy
  • 1 Cup Chicken Broth
  • Salt And Pepper -- To Taste
  • 1/4 Teaspoon Nutmeg
  • 1 Teaspoon Saffron
  • 1 Pound Swordfish -- Cubed
Directions Saute onion, garlic and bell pepper until soft. Add tomato and bay leaf. Simmre for 1 minute. Stir in brandy, broth, salt, pepper, nutmeg and saffron. Add fish and simmer for 10 minutes. Serve.
