Spanish   -   Prawns In Pastis With Lemon And Tomatoes   adapted from The Basque Kitchen by Gerald Hirigoyen

  • 2 Tablespoons Olive Oil
  • 2 Pounds Shrimp
  • 10 Ounces Cherry Tomatoes -- Halved
  • 3 Tablespoons Pastis
  • 1 Lemon Lemon Juice
  • 2 Tablespoons Butter
  • 2 Tablespoons Basil -- Chopped
  • 1 Tablespoon Parsley -- Chopped
  • 1 Tablespoon Chives -- Chopped
  • Salt And Pepper -- To Taste
Directions Saute shrimp in oil for 1 minute. Add tomatoes and pastis. Saute for 1 minute. Add lemon, butter, basil, parsley and chives. Season with salt and pepper. Swirl until butter melts and serve.
