Ingredients
  • 1/4 Cup Olive Oil
  • 2 Large Red Onions -- chopped
  • 2 Large Green Peppers -- chopped
  • 2 Large Tomatoes -- chopped
  • Salt And Pepper -- to taste
  • 6 Cups Chickpeas, Drained -- canned or cooked
  • 1 Cup Parsley -- chopped
Directions Saute onions & peppers in olive oil 10 minutes.
Add tomatoes, salt and pepper, cook 20 minutes.
Add chickpeas & parsley, cook 30 minutes over low heat.
Serves 6
