Spanish   -   Spanish Chorizo   adapted from The Art of Food Processor Cooking

Ingredients
  • 1 1/2 Pounds Pork -- cut in 1-inch pieces
  • 1 1/2 Teaspoons Chili Powder
  • 1 1/2 Teaspoons Paprika
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Turmeric
  • 1/2 Teaspoon White Pepper
  • 1/2 Teaspoon Cayenne
  • 3 Cloves Garlic
  • 1 Small Onion
  • 1 Tablespoon White Vinegar
Directions Use S-blade, process onion & garlic small pieces. Add all other ingredients. Process until it becomes sausage like texture. IF you have casings, stuff them.
Serves 6
