Spanish   -   Spanish Meatballs   adapted from Taste of Spain

  • 1/2 Pound Lamb -- ground
  • 1 Pound Pork -- ground
  • 3 Cloves Garlic
  • 1/4 Cup Fresh Bread Crumbs
  • 1 Hard-Boiled Egg -- chopped
  • Salt And Pepper
  • 1/4 Cup Flour
  • Oil -- for frying
  • 1/2 Teaspoon Paprika
  • 1/2 Cup White Wine
  • 1/2 Cup Beef Broth
  • 2 Tablespoons Tomato Puree
  • 1 Teaspoon Parsley
Directions Combine meat, garlic, bread crumbs, egg, salt & pepper. Form into balls, roll in flour. Heat oil in pan, fry balls until golden. In another pan, combine wine, paprika and stock, and boil then add puree. Put balls in pan, cover with sauce and cook for 20 minutes. Sprinkle with parsley and serve.
