Spanish   -   Spanish Style Mushrooms In Green Sauce   adapted from Spicy Vegetarian Cuisine

  • 4 Tablespoons Olive Oil
  • 2 Tablespoons Unsalted Butter
  • 1 Pound Small Button Mushrooms -- quartered
  • 1 Small Yellow Onion -- finely chopped
  • 4 Cloves Garlic -- finely chopped
  • 4 Teaspoons Flour
  • 1/2 Cup White Wine
  • 1/4 Cup Vegetable Broth
  • 2 Tablespoons Milk
  • 1/2 Cup Fresh Parsley -- finely chopped
  • 1 Tablespoon Crushed Red Pepper
  • 2/3 Cup Oil Cured Olives -- pitted
  • Salt And Pepper -- to taste
  • Lemon Slices -- for garnish
  • Parsley -- for garnish
Directions In saute pan, saute mushrooms in butter and olive oil. Remove mushrooms from pan when well browned. In same pan, saute onion until wilted. add garlic and flour, cook for 1 minute. pour in wine, stock and milk. Stir to combine then add the remaining ingredients. Add mushrooms, stir and serve garjnished with the additional parsley and lemon slices.
