Spanish   -   Stone Soup   adapted from Food of Spain and Portugal

Ingredients
  • 1 Cup Red Kidney Beans -- dried
  • 4 Ounces Bacon
  • 4 Ounces Chorizo
  • 1 Large Onion -- chopped
  • 1 Clove Garlic -- chopped
  • 4 Cups Chicken Stock
  • 1 Bay Leaf
  • Salt And Pepper -- to taste
  • 1 Pound Potatoes -- diced
  • 1/2 Cup Fresh Coriander
  • 2 Small Turnips -- diced
  • 2 Small Carrots -- diced
  • 4 Ounces Cabbage -- thinly sliced
Directions Cook the beans as per package directions. Saute bacon, sausage, onion and garlic for 5 minutes. Add all remaining ingredients and simmer for 45 minutes. DIscard bay leaf and serve.
