Spanish   -   Tortilla Torcal (Potato, Chorizo, And Vegetable Omelet)   adapted from Tapas by Penelope Casas

  • 1/4 Cup Olive Oil
  • 2 Medium Potates -- Cubed
  • 6 Large Eggs
  • Salt And Pepper -- To Taste
  • 1 Small Onion -- Chopped
  • 1/4 Pound Chorizo -- Chopped
  • 1/4 Cup Ham -- Chopped
  • 1/2 Cup Peas
  • 1/2 Cup Baby Lima Beans -- Cooked
Directions Saute potatoes in oil for 10 minutes. Add chorizo and ham. Saute for 5 minutes. Stir in peas and beans. Saute for 2 minutes. Add eggs, salt and pepper. Cook until the eggs set on the bottom. Flip and cook until the eggs are done. Serve in wedges.
