Spanish   -   Tortillas De Gambas   adapted from The Complete Spanish Cookbook

  • 12 Ounces Small Shrimp -- finely chopped
  • 1 Small Onion -- finely chopped
  • 1 Clove Garlic -- finely chopped
  • 1 Tablespoon Parsley -- finely chopped
  • 1 1/2 Cups Flour
  • 1 Teaspoon Baking Powder
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Chili Powder
  • 1 Tablespoon Dry Sherry
  • 4 Cups Olive Oil
Directions Mix shrimp, onion, garlic, and parsley. Sift the flour, baking powder, salt, pepper and paprika into a bowl. Add the sherry and enough water to make a creamy batter. Stir in the shrimp mixture. Heat the oil in wide pan and fry spoonfuls of the mixture until crisp and golden. Remove with a skimmer and drain on paper towels. Serve hot.
