Sri Lankan   -   Chutney Beef Or Pork   adapted from Fire and Spice by Heather Jansz Balasuriya

  • 1 Pound Beef -- thinly sliced
  • 1 Tablespoon Olive Oil
  • 1 1/2 Cups Brown Sugar
  • 1 Cup Cider Vinegar
  • 2 Tablespoons Chili Powder
  • 2 Teaspoons Ginger -- finely chopped
  • 4 Cloves Garlic -- finely chopped
  • 1/2 Teaspoon Cardamom
  • 5 Whole Cloves
  • 1 Stick Cinnamon
  • Salt -- to taste
Directions Saute beef or pork in oil until well browned. Set aside and keep warm. Combine sugar and vinegar in saucepan and dissolve over low heat. Cook until it is a thick syrup, then add remaining ingredients. Simmer for 25 minutes. Stir frequently so mixture doesnt stick to the pan. Combine beef with mixture and serve over rice.
