Sri Lankan - White Potato Curry

Ingredients

- 6 Medium Potatoes -- cooked and cubed
- 3 Tablespoons Olive Oil
- 1 Large Onion -- chopped
- 3 Cloves Garlic -- chopped
- 1 Stick Cinnamon
- 1 Teaspoon Crushed Red Pepper
- 1/2 Teaspoon Turmeric
- 1 Teaspoon Cumin
- 1 Large Tomato -- cubed
- 2 Cups Coconut Milk
- 1 Cup Water

Directions
|
Heat oil in skillet, brown onoins and garlic for 5 minutes. Add cinnamon, red pepper, turmeric, cumin and tomato. Saute 5 minutes. Add milk and water, bring to boil. Add potatoes and simmer 10 minutes serve over rice.
