Sri Lankan   -   White Potato Curry   adapted from Fire and Spice by Heather Jansz Balasuriya

Ingredients
  • 6 Medium Potatoes -- cooked and cubed
  • 3 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 3 Cloves Garlic -- chopped
  • 1 Stick Cinnamon
  • 1 Teaspoon Crushed Red Pepper
  • 1/2 Teaspoon Turmeric
  • 1 Teaspoon Cumin
  • 1 Large Tomato -- cubed
  • 2 Cups Coconut Milk
  • 1 Cup Water
Directions Heat oil in skillet, brown onoins and garlic for 5 minutes. Add cinnamon, red pepper, turmeric, cumin and tomato. Saute 5 minutes. Add milk and water, bring to boil. Add potatoes and simmer 10 minutes serve over rice.
