Swedish   -   Slottsstek (Swedish Royal Pot Roast)   adapted from Classic Scandinavian Cooking By Nika Hazelton

  • 4 Pounds Beef Round
  • 2 Teaspoons Salt
  • 1 Teaspoon Allspice
  • 1/2 Teaspoon Pepper
  • 3 Tablespoons Butter
  • 3 Tablespoons Brandy
  • 1 Cup Beef Broth
  • 2 Large Onions -- Sliced
  • 2 Medium Bay Leaves
  • 2 Tablespoons White Vinegar
  • 2 Tablespoons Molasses
  • Parsley -- Chopped
Directions Rub meat with salt, allspice and pepper. Saute in butter until brown on all sides. Pour in brandy and ignite. Add broth, onions, bay leaves, vinegar and molasses. Stir well, and simmer covered for 2 hours. Slice, sprinkle with parsley and serve.
