Thai - Bplah Dtom Saep (Flounder In A Spicy Sauce)

Ingredients
|
- 4 Large Flounder Fillet
- 1 Teaspoon Pepper
- 6 Cloves Garlic -- Chopped
- 6 Medium Thai Chiles -- Chopped
- 3 Large Shallot -- Chopped
- 1 Tablespoon Palm Sugar
- 1 Cup Water
- 1 Teaspoon Ginger
- 1 Tablespoon Peanut Oil
- 2 Tablespoons Fish Sauce
- Cilantro -- Chopped

Directions

Combine pepper, garlic, chiles and shallots in blender. Puree. Combine sugar and water and bring to a boil. Add ginger, oil, garlic mixture, and fish sauce. Stir well. Add fish and simmer for 5 minutes. Turn over and cook for 3 minutes. Remove fish and keep warm. Reduce sauce to 1/3. Spoon over fish, sprinkle with cilantro and serve over rice.
