Thai   -   Bplah Dtom Saep (Flounder In A Spicy Sauce)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 4 Large Flounder Fillet
  • 1 Teaspoon Pepper
  • 6 Cloves Garlic -- Chopped
  • 6 Medium Thai Chiles -- Chopped
  • 3 Large Shallot -- Chopped
  • 1 Tablespoon Palm Sugar
  • 1 Cup Water
  • 1 Teaspoon Ginger
  • 1 Tablespoon Peanut Oil
  • 2 Tablespoons Fish Sauce
  • Cilantro -- Chopped
Directions Combine pepper, garlic, chiles and shallots in blender. Puree. Combine sugar and water and bring to a boil. Add ginger, oil, garlic mixture, and fish sauce. Stir well. Add fish and simmer for 5 minutes. Turn over and cook for 3 minutes. Remove fish and keep warm. Reduce sauce to 1/3. Spoon over fish, sprinkle with cilantro and serve over rice.
