Thai   -   Bplah Gkapong Daeng Jian Dtow See (Garlic Red Snapper)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 4 Large Red Snapper Fillets
  • 1 Head Garlic -- Chopped
  • 1 Teaspoon Ginger
  • 2 Tablespoons Cilantro -- Chopped
  • 3 Tablespoons Salted Black Beans
  • 1 Tablespoon Dark Soy Sauce
  • 2 Teaspoons Sugar
  • 2 Tablespoons Rice Wine
  • 3 Tablespoons Peanut Oil
  • 1 Teaspoon Red Pepper Flakes
Directions Mix soy sauce, sugar and rice wine. Saute fish in oil for 2 minutes per side. Transfer to a plate and keep warm. Add garlic, ginger and cilantro to the pan. Saute for 20 seconds. Add soy sauce mixture and pepper flakes. Add beans and return fish to the pan. Saute for 2 minutes per side and serve fish, topped with sauce over rice.
