Thai   -   Bplah Gkow Tawd Sabm Roet (Roasted Garlic Flavored Grouper)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 4 Medium Grouper Fillet
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon White Pepper
  • 2 Heads Garlic -- Roasted
  • 10 Medium Thai Chiles -- Roasted And Chopped
  • 2 Tablespoons Fish Sauce
  • 1 Lime Lime Juice
  • 2 Tablespoons Tamarind Paste
  • 3 Tablespoons Palm Sugar
  • 3 Tablespoons Peanut Oil
  • 2 Tablespoons Cornstarch
  • Cilantro
Directions In a small bowl, combine fish sauce, lime juice, tamarind paste and palm sugar. Coat fish in cornstarch. Saute in oil for 4 minutes per side. Remove fish and keep warm. Add garlic and chiles to the pan. Saute for 20 seconds. Add fish sauce mixture, salt and pepper. Bring to a boil, pour over fish, sprinkle with cilantro and serve with rice.
