Thai   -   Bplah Jeramed Tawd Gkratiem Priktai (Garlic Pompano)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 1 Pound Pompano Fillet -- Or Perch Or Tilapia
  • 4 Cloves Garlic -- Chopped
  • 1/2 Teaspoon Salt
  • 1 Teaspoon White Pepper
  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Corn Starch
  • 1 Head Garlic -- Chopped
  • 2 Tablespoons Fish Sauce
  • 4 Tablespoons Cilantro -- Chopped
  • 3 Medium Thai Chilis -- Chopped
  • 2 Tablespoons Fish Sauce
  • 1 Lime Lime Juice
  • 1/2 Teaspoon Sugar
Directions Combine chilis, fish sauce, lime juice, and sugar, stir well, set aside. Rub the 4 cloves of garlic into the fillets along with salt and white pepper, allow to marinate for 25 minutes. Sprinkle fish with corn starch, saute fish in oil for 5 minutes per side, until golden brown. Add garlic, saute 1 minute. Add fish sauce and cilantro, saute 1 minute, serve over rice, covered with chili lime sauce.
