Thai   -   Bplah Rad Prik Horapa (Crisped Fish With Wilted Basil)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 4 Large Bass Fillet
  • 1 Clove Garlic -- Chopped
  • 5 Medium Thai Chiles -- Chopped
  • 1 Medium Serrano Pepper -- Chopped
  • 4 Tablespoons Peanut Oil
  • 1 Lime Lime Juice
  • 2 Tablespoons Cornstarch
  • 2 Tablespoons Fish Sauce
  • 1 Teaspoon Sugar
  • 1/2 Cup Packed Basil -- Chopped
  • 1 Tablespoon Water
Directions Puree garlic, Thai chiles and serrano in blender. Coat fish in lime juice and then in cornstarch. Saute in oil until well browned, about 7 minutes per side. Remove and keep warm. Add garlic mixture to the pan and saute for 30 seconds. Add fish sauce, sugar and basil. Saute for 1 minute. Add water and saute for 1 minute. Cover fish with sauce and serve with rice.
