Thai   -   Bplah Salmon Pad Gkaprow (Samon With Basil)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 2 Teaspoons Peanut Oil
  • 4 Cloves Garlic -- Chopped
  • 3 Large Shallots -- Chopped
  • 1 Pound Salmon Fillets -- Cubed
  • 3 Medium Thai Chilis -- Chopped
  • 1 Lime Lime Juice
  • 2 Teaspoons Black Soy Sauce
  • 1 Cup Basil -- Chopped
  • 2 Tablespoons Fish Sauce
  • 1 Teaspoon White Pepper
Directions Saute garlic and shallots in oil for 1 minute, add salmon and chilis, saute 3 minutes stirring constantly. Add lime juice, soy sauce, saute 2 minutes. add basil, fish sauce and pepper, saute until fish is thoroughly cooked. Serve over jasmine rice.
