Thai   -   Bplah Tawd Kamin (Turmeric Fried Fish)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 4 Medium Fish Steak -- Any Kind
  • 2 Tablespoons Turmeric
  • 8 Cloves Garlic -- Chopped
  • 1 Teaspoon Salt
  • 1 Teaspoon White Pepper
  • 8 Medium Thai Chiles -- Chopped
  • 2 Medium Shallot -- Chopped
  • 1/4 Cup White Vinegar
  • 2 Teaspoons Sugar
  • 2 Tablespoons Fish Sauce
  • 3 Tablespoons Peanut Oil
  • 2 Tablespoons Tapioca Starch -- Or Cornstarch
Directions Combine turmeric, garlic, salt and white pepper. Rub into fish. Marinate for 30 minutes. Combine chiles, shallots, vinegar, fish sauce and sugar. Mix well. Allow to sit for 30 minutes. Dredge fish in starch and saute in oil until golden brown on both sides. Serve fish with dipping sauce.
