Thai   -   Chaing Mai Noodles   adapted from Classic Thai Cuisine

  • 1 Batch Thai Curry Paste
  • 2 Tablespoons Soy Sauce
  • 1 Pound Chicken -- cubed
  • 2 Cups Chicken Stock
  • 1/2 Cup Oil
  • 12 Ounces Noodles
  • 4 Cloves Garlic
  • Salt And Pepper -- to taste
  • 2 Tablespoons Cilantro -- garnish
  • 1 Medium Onion -- chopped
  • 8 Ounces Mushroom -- sliced
Directions Add curry paste to hot wok, no oil first. Stir fry 2-3 minutes until fragrant. Add oil, chicken and soy sauce. brown the meat, cover with stock. Simmer 15 minutes. Cook noodles as directed. In a different skillet, saute garlic, when softened add salt, then combine all 3 mixtures. Sprinkle cilantro on top.
