Thai - Chaing Mai Noodles

Ingredients
|
- 1 Batch Thai Curry Paste
- 2 Tablespoons Soy Sauce
- 1 Pound Chicken -- cubed
- 2 Cups Chicken Stock
- 1/2 Cup Oil
- 12 Ounces Noodles
- 4 Cloves Garlic
- Salt And Pepper -- to taste
- 2 Tablespoons Cilantro -- garnish
- 1 Medium Onion -- chopped
- 8 Ounces Mushroom -- sliced

Directions
|
Add curry paste to hot wok, no oil first. Stir fry 2-3 minutes until fragrant. Add oil, chicken and soy sauce. brown the meat, cover with stock. Simmer 15 minutes. Cook noodles as directed. In a different skillet, saute garlic, when softened add salt, then combine all 3 mixtures. Sprinkle cilantro on top.
