Thai - Chicken With Ginger (Gai King)

Ingredients

- 3 Tablespoons Olive Oil
- 1 Medium Onion -- finely chopped
- 5 Cloves Garlic -- finely chopped
- 3 Pounds Chicken -- cubed
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Ginger Root -- finely chopped
- 2 Tablespoons Mint Leaves -- finely chopped
- 8 Medium Chinese Mushrooms -- soaked in hot water
- 5 Large Green Onion -- finely chopped
- 2 Large Serrano Pepper -- finely chopped
- 2 Tablespoons Rice Vinegar
- 1 Teaspoon Sugar
- 2 Tablespoons Fish Sauce

Directions
|
Heat oil in pan and fry onions until limp. Add garlic and fy for 2 minutes. Remove onions and garlic, set aside. Add chicken to the now empty pan and stir fry for 2 minutes. Add soy sauce, ginger and mint leaves. Stir fry for 2 minutes. Add mushrooms, green onions, serranos and return garlic and onion to the pan. Cook for 5 minutes. Add rice vinegar, sugar, and fish sauce. Remove from heat and serve over rice.
