Thai   -   Choo Chee Shrimp   adapted from Real Thai

  • 1/2 Cup Coconut Cream
  • 1 Teaspoon Red Curry Paste
  • 1 Cup Coconut Milk
  • 1 Tablespoon Fish Sauce
  • 1 Tablespoon Palm Sugar -- or brown sugar
  • 1 Pound Medium Shrimp
  • 1 Handful Basil Leaves
  • 1 Lime Lime Juice
Directions Warm coconut cream over medium until it just boils. Adjust heat and maintain a gentle boil for 6 minutes. Add curry paste and dissolve into the coconut cream. Add coconut milk, fish sauce, and sugar. Stir well. Adjust heat to a gentle boil and cook for 8 minutes. Taste and adjust the seasoning with a little more fish sauce, sugar or curry paste. Add shrimp, half the basil and 1 half of the lime juice. Cook for 2 minutes. Remove from heat and stir in remaining basil and lime juice. Serve over rice.
