Thai   -   Curry Of Bean Curd   adapted from Classic Thai Cuisine

  • 2 Tablespoons Thai Curry Paste
  • 1 Tablespoon Fish Sauce
  • 1/2 Teaspoon Sugar
  • 5 Ounces Soft White Tofu
  • 1/2 Cup Coconut Milk
  • 1 Thai Chile -- juilliened
  • 1 Tablespoon Lime Juice
  • 2 Tablespoons Cilantro -- chopped
  • 1/2 Teaspoon Lemon Grass
  • Salt And Pepper -- to taste
Directions In pan over high heat ad curry paste and fry for 3 minutes until fragrant. Add fish sauce and sugar, fry until color deepens. Add tofu and cocnut milk, heat through about 4 minutes. Add remaining ingredients, be careful when stirring, tofu is delicate and will break up if yolu are not careful. Serve.
