Thai   -   Fish In Tamarind Sauce (Pla Chien)   adapted from The Original Thai Cookbook by Jennifer Brennan

  • 2 Pounds Fish Fillet -- sole or halibut
  • 1/2 Cup Peanut Oil
  • 6 Cloves Garlic -- finely chopped
  • 3 Tablespoons Soy Sauce
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Fish Sauce
  • 1 Teaspoon Tamarind Paste -- dissolved in
  • 6 Tablespoons Hot Water
  • 2 Tablespoons Ginger Root -- finely chopped
  • 6 Large Green Onion -- finely chopped
  • 2 Tablespoons Onion Flakes -- fried until golden
Directions Wash fish and dry thoroughly. Heat oil on high setting and briefly fry fillets on both sides until golden. Drain on paper towels. Pour off all but 2 teaspoons of oil. Fry garlic until light brown. Add soy sauce, sugar, fish sauce and tamarind liquid. Cook for 1 minute. Carefully return fish to this sauce. Sprinkle with ginger and green onions and cook for 2 minutes. Spoon sauce over fish. Serve sprinkled with the onion flakes.
