Thai   -   Fried Noodles (Siam)   adapted from Kitchen Witch's Cookbook

  • 1 Pound Vermicelli
  • 4 Tablespoons Olive Oil
  • 1 Clove Garlic -- chopped
  • 2 Medium Green Onion -- chopped
  • 1 Pound Pork -- cubed
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Soy Sauce
  • 1 1/4 Teaspoons Butter
  • 1 Dash Ginger
  • 1 Dash Pepper
  • Fresh Chives -- to garnish
Directions Cook noodles in a large pan of boiling water until tender. Drain; spread on flat surface using paper towels. Saute garlic, green onion and pork in olive oil. Add the noodles and remaining ingredients. Stir fry until hot and serve. Garnish with chives.
Varitions: Small salad shrimp or cubed chicken breast.
