Thai   -   Gkoong Dtom Yam Haeng (Hot And Sour Tiger Prawns)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 2 Pounds Tiger Prawns
  • 2 Heads Garlic -- Chopped
  • 6 Medium Shallot -- Chopped
  • 1 Teaspoon Lemon Grass
  • 8 Medium Thai Chiles -- Chopped
  • 1 Pinch Salt
  • 2 Limes Lime Juice
  • 4 Tablespoons Fish Sauce
  • 1 Tablespoon Palm Sugar
  • 1 Cup Cilantro -- Chopped
  • 3 Tablespoons Peanut Oil
Directions Combine garlic, shallots, lemon grass and chilies in a blender. Puree. Saute shrimp in oil for 1 minute. Add paste. Saute for 1 minute. Add lime juice, fish sauce, sugar and cilantro. Saute until the shrimp are pink. Serve over rice.
