Thai   -   Gkoong Pad Sadtaw (Southern Style Shrimp With Favas)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 10 Cloves Garlic -- Chopped
  • 2 Medium Serrano Pepper -- Chopped
  • 6 Medium Thai Chiles -- Chopped
  • 2 Teaspoons Shrimp Paste
  • 2 Tablespoons Peanut Oil
  • 1 Cup Fava Beans
  • 1 Pound Medium Shrimp
  • 1 Lime Lime Juice
  • 2 Teaspoons Palm Sugar
  • 2 Tablespoons Fish Sauce
  • 2 Medium Bay Leaves
  • 1 Medium Red Jalapeno -- Chopped
Directions Puree garlic, serranos, thai chiles and shrimp paste in a blender. Saute paste in oil for 1 minutes. Add fava beans and saute for 1 minute. Add shrimp and saute until they turn pink. Add lime juice, sugar, fish sauce, bay leaves and jalapeno. Saute for 1 minute. Remove bay leaves and discard. Serve over rice.
