Thai   -   Gkoong Yai Pad Som Makahb Bpiak (Tamarind Prawns)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 1 Pound Large Shrimp
  • 4 Tablespoons Peanut Oil
  • 2 Large Shallot -- Chopped
  • 8 Cloves Garlc -- Chopped
  • 4 Large Dried Chiles -- Chopped
  • 1 Small Onion -- Chopped
  • 2 Medium Jalapeno -- Chopped
  • 1/2 Cup Tamarind Juice
  • 2 Tablespoons Fish Sauce
  • 1 Tablespoon Hot Sauce
  • 1 Tablespoon Palm Sugar
  • 1 Medium Red Jalapeno -- Chopped
  • 1 Bunch Scallion -- Chopped
  • Cilantro -- Chopped
Directions Saute shallots in oil for 3 minutes. Add garlic and saute for 1 minute. Add dried chile pieces and saute for 1 minute. Add onion and saute for 2 minutes. Add jalapenos and saute for 2 minutes. Add tamarind juice, fish sauce, hot sauce and palm sugar. Bring to a boil. Add shrimp and simmer until the shrimp are done about 4 minutes. Sprinkle with jalapeno, scallions and cilantro. Serve over rice.
