Thai   -   Kao Pad Bpoo (Crab Fried Rice)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 3 Tablespoons Peanut Oil
  • 6 Cloves Garlic -- Chopped
  • 3 Cups Rice -- Cooked And Chilled
  • 1 Cup Crab -- Cooked And Shredded
  • 2 Medium Eggs -- Beaten
  • 1 Bunch Scallion -- Chopped
  • 2 Tablespoons Fish Sauce
  • 1 Teaspoon Sugar
  • 1 Lime Lime Juice
  • 1 Teaspoon White Pepper
  • 1/2 Cup Cilantro -- Chopped
Directions Saute garlic in oil for 1 minute. Add rice and saute for 1 minute. Add crab and saute for 2 minutes. Add eggs and stir in well. Add scallions, fish sauce, sugar and lime juice. Stir in well. Add pepper and saute for 3 minutes. Sprinkle with cilantro and serve.
