Thai   -   Miang Bplah (Fish With Sweet And Sour Sauce)   adapted from Dancing Shrimp by Kasma Loha-Unchit

  • 2 Pounds Bass Fillet
  • 1/4 Cup Palm Sugar
  • 2 Tablespoons Fish Sauce
  • 1 Lime Lime Juice
  • 1 Teaspoon Lemon Grass
  • 1 Teaspoon Ginger
  • 1 Large Shallot -- Chopped
  • 6 Medium Thai Chilis -- Chopped Or To Taste
  • 3 Tablespoons Peanut Oil
Directions Combine sugar, fish sauce and lime juice, simmer until it becomes a light syrup, remove from heat and cool. Saute fish in oil for 4 minutes per side. Add lemon grass, ginger, shallot and chilis, saute for 2 minutes. Serve, drizzled with sauce.
