Thai   -   Noodles And Pork Soup (Sen Mee Nam Gup Moo)   adapted from The Original Thai Cookbook by Jennifer Brennan

  • 4 Cups Chicken Stock
  • 1 Ounce Ground Pork
  • 2 Bundles Rice Vermicelli Noodles -- somen
  • 1 Cup Bean Sprouts
  • 3 Cloves Garlic -- minced and fried
  • 2 Tablespoons Fish Sauce
  • 2 Medium Lettuce Leaves -- finely chopped
  • 2 Medium Green Onion -- finely chopped
  • 1 Tablespoon Cilantro -- finely chopped
  • 1/2 Pound Cooked Pork Loin -- thinly sliced
  • 1 Tablespoon Red Pepper Flakes
  • 1 Tablespoon Sugar
  • 1 Tablespoon Peanuts -- ground
Directions In saucepan, heat chicken stock. Add ground pork and simmer for 3 minutes. Drop in noodles and bean sprouts, increase heat and boil for 5 minutes. Add garlic, fish sauce, lettuce, green onions, and cilantro. Remove from heat and pour into a large serving bowl. Add pork slices, pepper flakes, sugar and peanuts. Serve.
