Thai   -   Pork And Shrimp Mince (Neua Tang)   adapted from The Original Thai Cookbook by Jennifer Brennan

  • 1/2 Pound Cooked Shrimp -- finely chopped
  • 1/2 Pound Ground Pork
  • 1 Cup Coconut Milk
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Sugar
  • 2 Large Serrano Pepper -- finely chopped
  • 1 Tablespoon Cilantro -- finely chopped
Directions Combine shrimp and pork in a bowl. Heat coconut milk in saucepan over medium heat until it is just simmering. Stir in pork mixture. Bring to boiling point and reduce heat to a simmer. Cook uncovered for 3 minutes. Stir in salt, pepper and sugar. Add peppers and pour into serving dish. Garnish with cilantro and serve over rice.
