Thai   -   Red Fried Rice (Kao Pad Tamada)   adapted from The Original Thai Cookbook by Jennifer Brennan

  • 3 Tablespoons Olive Oil
  • 3 Cloves Garlic
  • 1 Medium Onion -- finely chopped
  • 1 Cup Cooked Shrimp
  • 2 Tablespoons Fish Sauce
  • 3 Cups Cooked Rice -- chilled
  • 3 Tablespoons Ketchup
  • 6 Medium Green Onions -- chopped
  • 3 Tablespoons Cilantro -- chopped
Directions Heat oil and lightly brown the garlic. Add onions and stir-fry until golden. Add shrimp and fish sauce and heat through. Stir in the rice and toss until everything is well mixed. Add ketchup and stir well. Remove to a platter. Garnish with onions and cilantro.
Serves 3
