Thai   -   Rice Noodles In Chicken Stock (Kwaytiow Nahm Gai Ruh Beht)   adapted from Real Thai

  • 6 Cups Chicken Stock
  • 1 Pound Rice Noodle Sheets -- cut into strips
  • 2 Cups Shredded Roast Chicken
  • 6 Tablespoons Fish Sauce
  • 1/2 Cup Green Onion -- sliced
  • 1/2 Cup Cilantro -- finely chopped
  • Salt And Pepper -- to taste
  • 4 Cloves Garlic -- sauted in oil
Directions In saucepan, bring stock to a boil. Add chicken, fish sauce, rice noodles, cilantro, salt, pepper, and green onions. Let simmer until chicken is warmed through, about 2 minutes. Serve and sprinkle with garlic.
