Thai - Rice Noodles With Broccoli (Kwaytiow Paht Si-Yu)

Ingredients
|
- 2 Tablespoons Dark Soy Sauce
- 1 Tablespoon Molasses
- 1 Tablespoon Fish Sauce
- 1/2 Tablespoon Black Pepper
- 3 Tablespoons Vegetable Oil
- 1 Tablespoon Garlic -- finely chopped
- 4 Cups Chinese Broccoli
- 1/2 Pound Flank Steak -- in strips
- 1 Pound Rice Noodle Sheets -- cut into strips
- 2 Medium Eggs -- lightly beaten
- Ground Thai Chiles -- to taste

Directions
|
Combine soy, molasses, fish sauce and pepper in a small bowl. Saute garlic in oil for about 15 seconds. Add broccoli and stir fry for 5 minutes. Remove from pan. Add beef and stir fry until no longer pink, about 2 minutes. Remove from pan. Add noodles and toss until heated through. Push noodles to the side of the pan. Add eggs and let cook for 30 seconds without stirring. Scramble eggs in with the noodles, add beef, broccoli and soy sauce mixture. Stir fry for 1 minute. Sprinkle with thai chile powder and serve.
