Thai   -   Spicy Shrimp Soup With Lemongrass & Lime   adapted from Real Thai

  • 4 Cups Chicken Stock
  • 2 Teaspoons Dried Lemongrass
  • 3 Limes Lime Juice
  • 6 Large Green Chiles -- chopped
  • 1 Bunch Green Onion -- chopped
  • 1 Tablespoon Roasted Chile Paste
  • 1 Cup Straw Mushrooms
  • 1 Pound Shrimp -- peelee & deveined
  • 2 Tablespoons Fish Sauce
Directions Bring stock to a boil with lemongrass. Allow to boil 5 minutes. Meanwhile place lime juice, green onions and chopped chiles in bowl, set aside. Skim off some of lemon grass and throw it away. Add chile paste and mushrooms. Boil 1 minute. Add fish sauce and shrimp cook 1 minute. Add lime/chile mixture, stir and serve.
