Thai - Spicy Shrimp Soup With Lemongrass & Lime

Ingredients
|
- 4 Cups Chicken Stock
- 2 Teaspoons Dried Lemongrass
- 3 Limes Lime Juice
- 6 Large Green Chiles -- chopped
- 1 Bunch Green Onion -- chopped
- 1 Tablespoon Roasted Chile Paste
- 1 Cup Straw Mushrooms
- 1 Pound Shrimp -- peelee & deveined
- 2 Tablespoons Fish Sauce

Directions
|
Bring stock to a boil with lemongrass. Allow to boil 5 minutes. Meanwhile place lime juice, green onions and chopped chiles in bowl, set aside. Skim off some of lemon grass and throw it away. Add chile paste and mushrooms. Boil 1 minute. Add fish sauce and shrimp cook 1 minute. Add lime/chile mixture, stir and serve.
