Thai   -   Thai Cashew Chicken   adapted from Real Thai

  • 2 Tablespoons Oil
  • 15 Small Thai Chiles
  • 1 Pound Chicken Breast -- cut into strips
  • 1 Small Onion -- chopped
  • 1 Tablespoon Fish Sauce
  • 1 Tablespoon Soy Sauce
  • 1/2 Teaspoon Sugar
  • 1/2 Cup Dry Roasted Cashews
Directions Heat oil in skillet. Stir fry chiles 1 minute. Remove and set aside. Increase heat, add chicken, stir fry until well browned. Add onion and fry 3 minutes. Add fish sauce, soy sauce & sugar, fry 1 minute. mix together cashews and reserved chiles. Serve, passing the bowl of cashews and chiles to be sprinkled on top.
