Thai   -   Thai Chicken And Basil With Mint   adapted from Hot and Spicy by Marlena Spieler

Ingredients
  • 1 1/2 Tablespoons Flour
  • 3 Medium Chicken Breast -- cubed
  • 2 Tablespoons Brandy
  • 2 Tablespoons Soy Sauce
  • 3 Medium Jalapeno -- finely chopped
  • 1 Tablespoon Vinegar
  • 1 Tablespoon Sugar
  • 1/2 Teaspoon Lemon Grass
  • 2 Tablespoons Olive Oil
  • 5 Medium Shallot -- finely chopped
  • 1 Lime Lime Juice
  • 1/4 Cup Basil -- finely chopped
  • 1/4 Cup Mint -- finely chopped
  • 1/4 Cup Cilantro -- finely chopped
  • 2 Tablespoons Peanuts -- chopped
  • 1 Medium Lime -- wedged
Directions Sprinkle flour over chicken, toss with brandy and 1 tablespoon of soy sauce. Set aside. For sauce mixture, combine chiles, vinegar, sugar, lemon grass and remaining soy sauce. Set aside. Saute chicken and shallots in oil until chicken turns white. Pour sauce over chicken and cook over high heat for 2 minutes. Squeeze lime over chicken and sauce. Top with basil, mint, cilantro and peanuts. Garnish with lime wedges.
