Ingredients
  • 2 Chicken Breasts -- cut up
  • 6 Cups Water
  • 1 Small Onion -- chopped
  • 1 Bay Leaf
  • 2 Sprigs Parsley
  • 1/2 Teaspoon Thyme
  • 1 Teaspoon Salt
  • 1/8 Teaspoon Pepper
  • 2 Cloves Garlic -- crushed
  • 2 Teaspoons Coriander -- ground
  • 1 1/2 Teaspoons Chili Powder
  • 1 Tablespoon Soy Sauce
  • 1/2 Pound Shrimp -- small
  • 2 Cups Mushroom -- sliced
  • 6 Scallion -- sliced
  • 1/3 Cup Parsley
  • 3 Cups Cooked Rice
Directions Add water, onion, bay leaf, parsley, thyme, salt & pepper, bring to a boil. Lower heat and simmer 1 hour covered.
Combine garlic, coriander, chili powder & soy sauce, slowly stir into broth, bring to boil.
Add chicken, shrimp, and mushrooms. Cook until chicken is tender and shrimp turns pink.
Before serving stir in sprigs and scallions.
Serves 6
