Thai   -   Thai Spareribs With Dipping Sauce   adapted from Barbecuing and Grilling

  • 1/2 Cup Fish Sauce
  • 1/4 Cup Sugar
  • 2 Teaspoons Salt
  • 1 Tablespoon Pepper
  • 2 Tablespoons Garlic -- finely chopped
  • 1 Tablespoon Cilantro -- finely chopped
  • 1/2 Cup Water
  • 7 Pounds Pork Spareribs
  • 2/3 Cup Sugar
  • 1/2 Cup Distilled Vinegar
  • 2 Teaspoons Salt
  • 2 Tablespoons Garlic -- finely chopped
  • 1 Medium Red Bell Pepper -- finely chopped
Directions In large bowl, combine fish sauce, sugar, salt, pepper, garlic, cilantro and water. Place ribs in a bowl and pour marinade on top. Marinate for 12 hours. Prepare fire. Place ribs on grill and grill for 45 minutes, turning frequently. In small saucepan, combine sugar, vinegar, salt, and garlic. Bring to a boil and reduce heat to a simmer. Cook until thick about 5 minutes. Finely grate bell pepper and add to sauce for color. Serve.
