Thai   -   Thai-Dyed Seafood Soup   adapted from Vivid Flavors

Ingredients
  • 6 Cups Water
  • 6 Kaffir Lime Leaves -- halved
  • Or
  • 2 Peels Lime -- chopped
  • 2 Inch Ginger Root -- chopped
  • 1 Bunch Scallions -- chopped
  • 1 Medium Lemon -- thinly sliced
  • 2 Medium Jalapeno -- chopped
  • Salt And Pepper -- to taste
  • 1/2 Pound Salmon -- cubed
  • 1/4 Cup Fresh Basil -- stripped
  • Palm Vinegar -- or white vinegar
  • Red Chile Paste -- to taste
Directions Bring water, lime leaves, ginger root, scallions, lemon and jalepenos to a boil. reduce heat, simmer for 8 minutes. Add salt, pepper and salmon. simmer until the salmon changes color. ladle into bowl, garnish with basil, vinegar and chile paste.
Serves 4
