Tunisian   -   Beef Meatballs (Kefta De Boeuf)   adapted from The Great Book of Couscous by Copeland Marks

Ingredients
  • 1 Pound Ground Beef
  • 1 Small Onion -- finely chopped
  • 6 Sprigs Parsley -- finely chopped
  • 2 Tablespoons Gruyere Cheese -- grated
  • 2 Teaspoons Ground Coriander
  • 2 Teaspoons Harissa (Tunisia)
  • 1/2 Teaspoon Salt
  • 2 Medium Egg Yolks
  • 1/4 Cup Bread Crumbs
  • 1/2 Cup Mashed Potatoes
  • 1/4 Cup Olive Oil
Directions Mix everything together, except the oil. Form into 10 meatballs. Heat oil in a skillet and brown the balls on all sides for about 5 minutes. Drain on paper towels. Serve over rice or couscous or can be served as an appetizer.
